I am donating some products to an association that is organising a quiz.
What document do I need to draw up from? Or does the association need to draw up a document for me?
Should I put the retail price on it? Or the purchase price?

If you are going to donate trade goods as sponsorship, you will need to reallocate part of those trade goods that are already in your accounts. You will need to record them as marketing or sponsorship. That way, they will simply be included in your costs. It is important that you can demonstrate that it is indeed sponsorship. The association can then provide or sign a document specifying the form of publicity that will be provided. For example, the logo will be displayed on flyers, on TV screens at the event, mentioned during a speech, etc.
